Grain Test Results

Attention Home Bakers! Our organic grains test results are in.* You may want to know about these results so you can adjust the moisture content of your dough or the time it needs to sit and rise when using our Organic Artisan Flour.

Our test results differ slightly each year. Big flour companies can create a flour mix with consistent critical components like protein, ash, and falling number every year. Smaller mills, like Early Morning Harvest, typically don’t have the capacity to recreate that consistency, so the flour may perform slightly different from year to year, especially when we pride ourselves on having nothing but grain in our flour.

The grain we harvest each season goes through a “sweat”, or rest period, in which the air draws out the moisture from the grain before its ready to be stored in our food-grain bins. We first send a small amount of grain to be tested for critical components. When we start milling the grain we send a batch of flour to be tested to ensure it meets the high standards at Early Morning Harvest.

Most comments we receive from our bread community are positive, but there are always some growing pains when becoming an artisan baker. Bakers who are not familiar with our flour might be unsure on how to incorporate it into their favorite bread recipes. A loaf of bread baked with fresh Early Morning Harvest flour acts completely different than a flour that’s mass produced to have exact amounts of critical components. Don’t give up just because you didn’t get the rise you wanted, sometimes you need to reach out to other home bakers that use the same artisan products.

We want to support our customers and baking lovers from new to professional! We encourage you to share photos, recipes, experiences, and challenges with each other and with us. Remember, our grain grows and tests a little different every year. Don’t be discouraged when you need to tweak a recipe here and there to get the perfect loaf. Play around, talk to your community, and find what works for you- that’s how we grow!


*At this time, we have not tested our 2024 harvest grain flour but will be in the next few months, 2023 flour results will be coming in the next few weeks.
